Ingredients List:
1 large head of cauliflower, about 2 pounds, which has been cut into flowerets
Sauce:
4 tbsp of butter
1/4 cup of flour
1/2 tsp salt
1/8 tsp of ground black pepper
2 cups of milk
1 tbsp Dijon mustard
1 1/2 cups of Cheddar cheese
Topping:
1 cup of soft fresh bread crumbs
1 tbsp of fresh chopped parsley
1/2 tsp of ground paprika
1 to 2 tbsp of melted butter
Directions:
The first thing that you are going to do is to boil or steam the cauliflower in water until it is nice and tender. This should take about 7 minutes. Once it is tender you will drain it and set it aside. Then you are going to grease a 2 quart baking dish and turn your oven on to 350 degrees. Take out a medium saucepan and melt the butter over a medium heat. Now you will want to add flour and stir it until it is smooth and bubbly. Now you will want to add salt, pepper, and milk. Cook the sauce and continue stirring it until it becomes thickened and bubbly. Now you will add mustard and cheese, continue cooking and stirring until the cheese becomes melted.
Combine the cauliflower with the sauce and spoon it into the prepared baking dish. Combine your topping ingredients and sprinkle the mixture over the cauliflower. Bake the dish for 15 to 20 minutes, or until the casserole is bubbly and the topping is browned. This is a great tasting dish that will make a real hit at your dinner table!
